Healthy After School Summer Snack

Here is a great after school snack your kids will love!

Remember those hot Summer days when you went to the fair or the beach and got that great treat that every kid loves??

[u]Chocolate Covered Frozen Bananas[/u}

* Bananas
* Chocolate Chips (or candy making chocolate bits)
* Peanut Butter (optional - your choice of chunky or creamy)
* Cookie Sprinkles (optional)
* Crushed peanuts (optional)
* Popsicle Sticks

This is such an easy snack treat to make, and your kids will LOVE helping!

Peel the banana (depending on the age or size of your children, you might want to cut it in half), and insert the popsicle stick approx. half way lengthwise.

Put the bananas into the freezer on a sheet of wax paper. Wait 15 minutes.

OPTIONAL STEP: If you, or your kids are peanut butter lovers, remove the bananas one at a time, cover them generously with peanut butter and put them back into the freezer for another 15-20 minutes or until the peanut butter is frozen.

Pour chocolate chips into a glass bowl and put in the microwave for 20 seconds. Remove and stir the chips. Put back into the microwave for another 20 seconds. Remove and stir again. Repeat until the chocolate is melted. Don't try to melt the chocolate in one long session as it may burn, and by stirring the chips frequently, you are mixing the heated ones with the not so heated ones until they start to melt each other.

If you have a fondue set, this also works great to melt the chocolate.

Once the chocolate is melted, remove a frozen banana (with or without peanut butter) from the freezer and either dip the banana into the chocolate, or if your bowl is a shallow one, pour chocolate over it with a spoon until completely covered. Move quickly so the chocolate stays soft, then dip (or pour) the cookie sprinkles and/or chopped nuts on top.

Once nicely decorated, the bananas are ready to eat immediately. You can keep the rest in the freezer on the wax paper, or if you prefer, put them on the wax paper until the chocolate freezes solid, then store in a freezer bag until you are ready to eat them. If you got good coverage with your chocolate they will last at least a week or two in the freezer.

That is if you can wait that long before eating them!
